Ingredients
- 4 medium carrots
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 teaspoon liquid smoke
- 1 tablespoon lemon juice
- 1 sheet nori
- 4 slices crusty bread
- 2 tablespoons vegan cream cheese
- 1 teaspoon capers
- 1 tablespoon fresh dill
Method
- Preheat the oven to 180°C (350°F).
- Peel the carrots and slice them thinly using a mandoline or vegetable peeler.
- In a bowl, mix olive oil, soy sauce, liquid smoke, and lemon juice.
- Add the carrot slices to the bowl and mix well to coat them evenly.
- Place the nori sheet in a baking dish and spread the carrot slices on top.
- Cover the dish with foil and bake for 20 minutes.
- Remove from the oven and let it cool.
- Toast the slices of crusty bread.
- Spread vegan cream cheese on each slice of toast.
- Top with marinated carrot slices, capers, and fresh dill.
- Serve immediately and enjoy!
