Vegan 'Smoked Salmon' Toasts

A smoky, plant-based twist on a favourite, using carrots to replicate the smoked salmon.

Vegan Smoked Salmon Toasts 🥕

Ingredients

  • 4 medium carrots
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon liquid smoke
  • 1 tablespoon lemon juice
  • 1 sheet nori
  • 4 slices crusty bread
  • 2 tablespoons vegan cream cheese
  • 1 teaspoon capers
  • 1 tablespoon fresh dill

Method

  1. Preheat the oven to 180°C (350°F).
  2. Peel the carrots and slice them thinly using a mandoline or vegetable peeler.
  3. In a bowl, mix olive oil, soy sauce, liquid smoke, and lemon juice.
  4. Add the carrot slices to the bowl and mix well to coat them evenly.
  5. Place the nori sheet in a baking dish and spread the carrot slices on top.
  6. Cover the dish with foil and bake for 20 minutes.
  7. Remove from the oven and let it cool.
  8. Toast the slices of crusty bread.
  9. Spread vegan cream cheese on each slice of toast.
  10. Top with marinated carrot slices, capers, and fresh dill.
  11. Serve immediately and enjoy!
