Ingredients
- 100g jumbo porridge oats
- 1 tsp ground cinnamon
- 2 tbsp chia seeds
- 200ml coconut milk
- 200g Greek yogurt
- 1 small mango, peeled, stoned, and chopped
- 2 passion fruits, pulp scooped out
- 1 small banana, sliced
- 2 tbsp toasted coconut flakes
- 2 tbsp mixed seeds
Method
- In a large bowl, combine the jumbo porridge oats, ground cinnamon, and chia seeds. Stir in the coconut milk and Greek yogurt until well combined.
- Cover the bowl and refrigerate overnight, or for at least 4 hours, to allow the oats and chia seeds to soak and soften.
- When ready to serve, divide the oat mixture between serving bowls.
- Top with chopped mango, passion fruit pulp, sliced banana, toasted coconut flakes, and mixed seeds.
- Serve immediately or store in the refrigerator for up to 2 days.
