Tropical Overnight Oats

Tropical Overnight Oats Recipe

Ingredients

  • 100g jumbo porridge oats
  • 1 tsp ground cinnamon
  • 2 tbsp chia seeds
  • 200ml coconut milk
  • 200g Greek yogurt
  • 1 small mango, peeled, stoned, and chopped
  • 2 passion fruits, pulp scooped out
  • 1 small banana, sliced
  • 2 tbsp toasted coconut flakes
  • 2 tbsp mixed seeds

Method

  1. In a large bowl, combine the jumbo porridge oats, ground cinnamon, and chia seeds. Stir in the coconut milk and Greek yogurt until well combined.
  2. Cover the bowl and refrigerate overnight, or for at least 4 hours, to allow the oats and chia seeds to soak and soften.
  3. When ready to serve, divide the oat mixture between serving bowls.
  4. Top with chopped mango, passion fruit pulp, sliced banana, toasted coconut flakes, and mixed seeds.
  5. Serve immediately or store in the refrigerator for up to 2 days.
