Tomato and Basil Soup

A flavourful, homemade take on the UK's favourite soup. The better quality your tomatoes, the better the soup!

Ingredients

  • Tomatoes
  • Onion
  • Garlic
  • Olive Oil
  • Vegetable Broth
  • Fresh Basil
  • Salt
  • Black Pepper

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
  3. Add the chopped tomatoes and cook for another 10 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Remove from heat and add the fresh basil leaves.
  6. Use an immersion blender to puree the soup until smooth.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with additional basil leaves if desired.
