Ingredients
- Tomatoes
- Onion
- Garlic
- Olive Oil
- Vegetable Broth
- Fresh Basil
- Salt
- Black Pepper
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
- Add the chopped tomatoes and cook for another 10 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Remove from heat and add the fresh basil leaves.
- Use an immersion blender to puree the soup until smooth.
- Season with salt and black pepper to taste.
- Serve hot, garnished with additional basil leaves if desired.
