Ingredients
- 1 baguette
- 250g cherry tomatoes
- 2 cloves garlic
- 1 tsp chilli flakes
- Handful of fresh basil
- Olive oil
- Salt
- Black pepper
Method
- Preheat the oven to 200°C (400°F).
- Slice the baguette into thick slices and place them on a baking sheet.
- Drizzle the slices with olive oil and toast in the oven for 5-7 minutes until golden brown.
- While the bread is toasting, finely chop the cherry tomatoes, garlic, and basil.
- In a bowl, mix the chopped tomatoes, garlic, basil, chilli flakes, salt, and black pepper.
- Once the bread is toasted, top each slice with the tomato mixture.
- Drizzle with a bit more olive oil if desired and serve immediately.
