Rhubarb Crumble

A English classic, with the tartness of the rhubarb complimenting the creaminess of the crumble perfectly. Forced Rhubarb is also in season in March!

Ingredients

  • 600g Rhubarb
  • 150g Caster Sugar
  • 204g Plain Flour
  • 102g Butter
  • 102g Brown Sugar

Method

  1. Preheat the oven to 180 degrees celsius.
  2. Trim and chop up the rhubarb.
  3. Sprinkle the rhubarb with Caster Sugar.
  4. In a bowl, mix the flour and brown sugar together.
  5. Rub the butter into the flour mixture until it resembles breadcrumbs.
  6. Sprinkle the crumble mixture over the rhubarb.
  7. Bake for 40 minutes or until the top is golden and the rhubarb is tender.
  8. Serve warm with custard or ice cream.
