Pumpkin Coconut Curry

Ingredients

  • Pumpkin
  • Coconut Milk
  • Onion
  • Garlic
  • Ginger
  • Curry Powder
  • Vegetable Oil
  • Salt
  • Spinach

Method

  1. Peel and chop the pumpkin into bite-sized pieces.
  2. Heat the vegetable oil in a large pot over medium heat.
  3. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
  4. Stir in the curry powder and cook for another minute.
  5. Add the pumpkin pieces and stir to coat with the spices.
  6. Pour in the coconut milk and bring to a simmer.
  7. Cover and cook for 20-25 minutes, or until the pumpkin is tender.
  8. Stir in the spinach and cook until wilted.
  9. Season with salt to taste and serve hot.
