- Pumpkin
- Coconut Milk

Method
- Peel and chop the pumpkin into bite-sized pieces.
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
- Stir in the curry powder and cook for another minute.
- Add the pumpkin pieces and stir to coat with the spices.
- Pour in the coconut milk and bring to a simmer.
- Cover and cook for 20-25 minutes, or until the pumpkin is tender.
- Stir in the spinach and cook until wilted.
- Season with salt to taste and serve hot.
