Ingredients
- 600g Potatoes
- 100g Onion
- 12g Garlic
- 52g Tomato Paste
- 4g Cayenne Pepper
- 12g White Wine Vinegar
- 52g Olive Oil
- 8g Paprika
- Salt
- Black Pepper
- Sugar
- Water
Method
- Peel and cut the potatoes into bite-sized cubes.
- Heat olive oil in a large frying pan over medium heat.
- Fry the potatoes until golden and crispy, about 15-20 minutes. Remove and drain on paper towels.
- In the same pan, add chopped onion and garlic, and saute until soft.
- Add tomato paste, paprika, cayenne pepper, salt, pepper, sugar, white wine vinegar, and water. Stir well.
- Simmer the sauce for 10 minutes until thickened.
- Serve the fried potatoes with the spicy tomato sauce drizzled on top.
