PSB Burrata Toasts

Ingredients

  • 600g Potatoes
  • 100g Onion
  • 12g Garlic
  • 52g Tomato Paste
  • 4g Cayenne Pepper
  • 12g White Wine Vinegar
  • 52g Olive Oil
  • 8g Paprika
  • Salt
  • Black Pepper
  • Sugar
  • Water

Method

  1. Peel and cut the potatoes into bite-sized cubes.
  2. Heat olive oil in a large frying pan over medium heat.
  3. Fry the potatoes until golden and crispy, about 15-20 minutes. Remove and drain on paper towels.
  4. In the same pan, add chopped onion and garlic, and saute until soft.
  5. Add tomato paste, paprika, cayenne pepper, salt, pepper, sugar, white wine vinegar, and water. Stir well.
  6. Simmer the sauce for 10 minutes until thickened.
  7. Serve the fried potatoes with the spicy tomato sauce drizzled on top.
