Instructions
- Heat the olive oil in a large paella pan over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Add the chopped red and green bell peppers, and cook for another 5 minutes.
- Stir in the chopped tomatoes, green beans, artichoke hearts, and peas. Cook for 5 more minutes.
- Add the paella rice and stir to coat the grains with the vegetable mixture.
- Pour in the vegetable broth, saffron threads, paprika, salt, and black pepper. Stir well.
- Bring to a boil, then reduce the heat to low and simmer uncovered for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let the paella rest for 5 minutes before serving.
- Garnish with lemon wedges and serve hot.
