Paella De Verduras

A healthy, veg-packed version of Spain's national dish. Slowly cooking the chopped vegetables also gives this recipe heaps of flavour.

Vegetable Paella Recipe

Ingredients

  • Olive oil
  • Onion
  • Garlic cloves
  • Red bell pepper
  • Green bell pepper
  • Tomatoes
  • Green beans
  • Artichoke hearts
  • Peas
  • Paella rice
  • Vegetable broth
  • Saffron threads
  • Paprika
  • Salt
  • Black pepper
  • Lemon wedges

Instructions

  1. Heat the olive oil in a large paella pan over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the chopped red and green bell peppers, and cook for another 5 minutes.
  4. Stir in the chopped tomatoes, green beans, artichoke hearts, and peas. Cook for 5 more minutes.
  5. Add the paella rice and stir to coat the grains with the vegetable mixture.
  6. Pour in the vegetable broth, saffron threads, paprika, salt, and black pepper. Stir well.
  7. Bring to a boil, then reduce the heat to low and simmer uncovered for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and let the paella rest for 5 minutes before serving.
  9. Garnish with lemon wedges and serve hot.
