Method
- Heat a large pot over medium heat and add a bit of oil.
- Add minced garlic and grated ginger, sauté until fragrant.
- Add sliced mushrooms, red bell pepper, and lemongrass stalks, cook for a few minutes.
- Pour in the chicken broth and bring to a boil.
- Add the chicken breasts and cook until they are fully cooked, then remove and shred them.
- Return the shredded chicken to the pot and add the coconut milk, fish sauce, and lime juice.
- Simmer for another 10 minutes to let the flavors meld together.
- Remove the lemongrass stalks, and add chopped cilantro and sliced red chili before serving.
