One Pot Thai Coconut & Lemongrass Soup

Ingredients

  • Coconut Milk
  • Lemongrass Stalks
  • Chicken Breast
  • Mushrooms
  • Red Bell Pepper
  • Garlic Cloves
  • Ginger
  • Fish Sauce
  • Lime Juice
  • Chicken Broth
  • Cilantro
  • Red Chili

Method

  1. Heat a large pot over medium heat and add a bit of oil.
  2. Add minced garlic and grated ginger, sauté until fragrant.
  3. Add sliced mushrooms, red bell pepper, and lemongrass stalks, cook for a few minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the chicken breasts and cook until they are fully cooked, then remove and shred them.
  6. Return the shredded chicken to the pot and add the coconut milk, fish sauce, and lime juice.
  7. Simmer for another 10 minutes to let the flavors meld together.
  8. Remove the lemongrass stalks, and add chopped cilantro and sliced red chili before serving.
