One Pot Spaghetti & Mushroom Ragu

Ingredients

  • Spaghetti (400g)
  • Mushrooms (300g)
  • 1 medium Onion (150g)
  • 3 cloves Garlic (15g)
  • Tomato Passata (500g)
  • Olive Oil (2 tbsp)
  • Salt (1 tsp)
  • Black Pepper (½ tsp)
  • Basil (1 tbsp)

Method

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the sliced mushrooms and cook until they release their moisture and start to brown.
  4. Pour in the tomato passata, and season with salt, pepper, and basil.
  5. Add the spaghetti and enough water to cover the pasta.
  6. Bring to a boil, then reduce the heat and simmer until the spaghetti is cooked and the sauce has thickened.
  7. Serve hot, garnished with fresh basil if desired.
