- Chickpeas
- Olive oil
- Onion
- Garlic
- Carrots
- Celery

Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
- Add the chopped carrots and celery, and cook for another 5 minutes.
- Stir in the cumin and paprika, and cook for 1 minute until fragrant.
- Add the canned tomatoes, chickpeas, and vegetable broth. Bring to a boil.
- Reduce the heat and let it simmer for 20 minutes, until the vegetables are tender.
- Season with salt and black pepper to taste.
- Stir in the spinach and cook until wilted, about 2 minutes.
- Serve hot and enjoy!
