Chickpea Vegetable Stew Recipe

Ingredients

  • Chickpeas
  • Olive oil
  • Onion
  • Garlic
  • Carrots
  • Celery
  • Tomatoes
  • Vegetable broth
  • Cumin
  • Paprika
  • Salt
  • Black pepper
  • Spinach

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
  3. Add the chopped carrots and celery, and cook for another 5 minutes.
  4. Stir in the cumin and paprika, and cook for 1 minute until fragrant.
  5. Add the canned tomatoes, chickpeas, and vegetable broth. Bring to a boil.
  6. Reduce the heat and let it simmer for 20 minutes, until the vegetables are tender.
  7. Season with salt and black pepper to taste.
  8. Stir in the spinach and cook until wilted, about 2 minutes.
  9. Serve hot and enjoy!
