Creamy Garlic One Pot Pasta

Creamy Tomato Garlic Pasta Recipe

Ingredients

  • 85g of your favourite pasta
  • 1 tbsp tomato paste
  • 10-12 cherry tomatoes, halved
  • 2 tbsp chopped garlic
  • 1 tbsp olive oil
  • 1 tsp black pepper
  • 1 tsp chilli flakes (optional)
  • Parmesan cheese (as much as you fancy)

Method

  1. Bring a pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve some pasta water.
  2. In a large pan, heat olive oil over medium heat. Add the chopped garlic and sauté for about a minute until fragrant.
  3. Add the halved cherry tomatoes and cook for 2-3 minutes until softened and juices release.
  4. Push the tomatoes to the side of the pan and add tomato paste. Stir for a minute to cook off the raw taste.
  5. Add a ladle of pasta water to the tomato mixture, allowing it to form a sauce-like consistency.
  6. Toss the cooked pasta into the pan, coating it in the sauce. Season with black pepper and chili flakes.
  7. Grate Parmesan over the pasta and mix until creamy.
  8. Plate the pasta, garnish with extra Parmesan and herbs if desired, and enjoy!
