Ingredients
- 85g of your favourite pasta
- 1 tbsp tomato paste
- 10-12 cherry tomatoes, halved
- 2 tbsp chopped garlic
- 1 tbsp olive oil
- 1 tsp black pepper
- 1 tsp chilli flakes (optional)
- Parmesan cheese (as much as you fancy)
Method
- Bring a pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve some pasta water.
- In a large pan, heat olive oil over medium heat. Add the chopped garlic and sauté for about a minute until fragrant.
- Add the halved cherry tomatoes and cook for 2-3 minutes until softened and juices release.
- Push the tomatoes to the side of the pan and add tomato paste. Stir for a minute to cook off the raw taste.
- Add a ladle of pasta water to the tomato mixture, allowing it to form a sauce-like consistency.
- Toss the cooked pasta into the pan, coating it in the sauce. Season with black pepper and chili flakes.
- Grate Parmesan over the pasta and mix until creamy.
- Plate the pasta, garnish with extra Parmesan and herbs if desired, and enjoy!
