Ingredients
- 2 tbsp olive oil
- 2 leeks, trimmed and finely sliced
- 2 garlic cloves, sliced
- 1 red chilli, finely chopped
- 4 eggs
- 4 slices of sourdough bread, toasted
- 50g feta cheese, crumbled
- Handful of fresh parsley, chopped
- Salt and pepper to taste
Method
- Heat the olive oil in a large frying pan over medium heat. Add the sliced leeks and cook for 8-10 minutes, stirring occasionally, until they are soft and starting to caramelize.
- Add the sliced garlic and chopped chilli to the pan and cook for another 2-3 minutes until fragrant.
- Push the leek mixture to one side of the pan and crack the eggs into the other side. Fry the eggs to your liking.
- Meanwhile, toast the sourdough bread slices until golden.
- To serve, place the toast on plates and top with the leek and garlic mixture. Add the fried eggs on top and sprinkle with crumbled feta, chopped parsley, and season with salt and pepper.
- Serve immediately and enjoy!
