Brussels Sprouts and Chestnut Salad

Ingredients

  • 100g Chestnuts
  • 30g Parmesan Cheese
  • 200g Brussels Sprouts
  • 1 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • 1 tsp Salt
  • 1 tsp Black Pepper

Method

  1. Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves.
  2. Slice the Brussels sprouts thinly using a sharp knife or a mandoline.
  3. In a large bowl, combine the sliced Brussels sprouts and roasted chestnuts.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  5. Pour the dressing over the Brussels sprouts and chestnuts, and toss to combine.
  6. If using, sprinkle the Parmesan cheese over the salad and toss again.
  7. Serve immediately or let it sit for a few minutes to allow the flavors to meld.
