Ingredients
- 40g Sourdough Bread
- 64g Burrata
- 52g Purple Sprouting Broccoli
- 4g Chilli Flakes
- 1 Garlic Clove
- Olive Oil
- Salt
- Black Pepper
Method
- Preheat the oven to 200 degrees celsius.
- Trim the purple sprouting broccoli and blanch in boiling water for 2-3 minutes until tender. Drain and set aside.
- Toast the sourdough bread slices in the oven for 5 minutes until golden and crispy.
- In a small pan, heat the olive oil over medium heat. Add the garlic and chilli flakes, and cook for 1-2 minutes.
- Spread the toasted sourdough with burrata, top with the blanched broccoli, and drizzle with the chilli oil.
- Season with salt and pepper, and serve immediately.
