Purple Sprouting Broccoli Burrata Toasts with Chilli Oil

Purple Sprouting Broccoli is in season in March, and goes perfectly with creamy burrata and spicy chilli oil.

Ingredients

  • 40g Sourdough Bread
  • 64g Burrata
  • 52g Purple Sprouting Broccoli
  • 4g Chilli Flakes
  • 1 Garlic Clove
  • Olive Oil
  • Salt
  • Black Pepper

Method

  1. Preheat the oven to 200 degrees celsius.
  2. Trim the purple sprouting broccoli and blanch in boiling water for 2-3 minutes until tender. Drain and set aside.
  3. Toast the sourdough bread slices in the oven for 5 minutes until golden and crispy.
  4. In a small pan, heat the olive oil over medium heat. Add the garlic and chilli flakes, and cook for 1-2 minutes.
  5. Spread the toasted sourdough with burrata, top with the blanched broccoli, and drizzle with the chilli oil.
  6. Season with salt and pepper, and serve immediately.
