Ingredients
- 175g Cashews
- 300g Ladyfingers
- 200ml Coffee
- 400ml Coconut Cream
- 100ml Maple Syrup
Method
- Soak the cashews in water for at least 4 hours or overnight.
- Drain and rinse the cashews, then blend them with coconut cream and maple syrup until smooth.
- Brew the coffee and let it cool to room temperature.
- Dip each ladyfinger into the coffee and arrange them in a single layer in a dish.
- Spread half of the cashew cream mixture over the ladyfingers.
- Repeat the layers with the remaining ladyfingers and cashew cream.
- Refrigerate for at least 4 hours or overnight to set.
- Serve chilled and enjoy!
