Ingredients
- 1-1½ cups of cooked rice (300g)
- 1 Chinese sausage (85g)
- ½ cup of cubed firm tofu (120g)
- 1 egg, lightly beaten (50g)
- ½ cup of frozen mixed vegetables (75g)
- A small handful of chopped cilantro (10g)
- 2-3 cloves of garlic, chopped (10g)
- 2-3 tablespoons of Thai red curry paste (45g)
- 1 tablespoon of oil (15g)
Method
- In a non-stick pan on medium-high heat, add Chinese sausage and fry till just crispy.
- Add garlic and curry paste. Fry for 10 seconds.
- Add tofu, keeping everything moving.
- Toss in rice and vegetables. Fry for another 10 seconds, then pour beaten egg over rice.
- Stir well.
- Remove from heat, and stir through cilantro.
- Serve warm, garnished with a sprig of cilantro.
