Thai Red Curry Fried Rice

Ingredients

  • 1-1½ cups of cooked rice (300g)
  • 1 Chinese sausage (85g)
  • ½ cup of cubed firm tofu (120g)
  • 1 egg, lightly beaten (50g)
  • ½ cup of frozen mixed vegetables (75g)
  • A small handful of chopped cilantro (10g)
  • 2-3 cloves of garlic, chopped (10g)
  • 2-3 tablespoons of Thai red curry paste (45g)
  • 1 tablespoon of oil (15g)

Method

  1. In a non-stick pan on medium-high heat, add Chinese sausage and fry till just crispy.
  2. Add garlic and curry paste. Fry for 10 seconds.
  3. Add tofu, keeping everything moving.
  4. Toss in rice and vegetables. Fry for another 10 seconds, then pour beaten egg over rice.
  5. Stir well.
  6. Remove from heat, and stir through cilantro.
  7. Serve warm, garnished with a sprig of cilantro.
