A healthy, protein-packed meal that's also full of flavour. Perfect for either lunch or dinner.

Thai Chicken Salad

Ingredients

  • 2 heads of lettuce (300g)
  • 4 roasted chicken breasts (500g)
  • 4 tomatoes (240g)
  • 1 yellow pepper (150g)
  • 6 spring onions (90g)
  • 100 grams of bean sprouts
  • 1 tablespoon of tahini (15g)
  • 1 tablespoon of sunflower oil (15g)
  • 1 tablespoon of white vinegar (15g)
  • 1 teaspoon of sugar (4g)
  • A pinch of chilli powder (1g)

Method

  1. Remove and discard any lettuce leaves which are bruised and yellow.
  2. Wash and thoroughly dry the lettuce then place in a large salad bowl.
  3. Chop the chicken into bite-sized pieces and mix with the tomatoes, pepper, spring onions, and bean sprouts.
  4. Add to the bowl.
  5. Mix together the dressing ingredients: tahini, sunflower oil, white vinegar, sugar, and chilli powder.
  6. Pour over the salad, toss, and serve.
