Ingredients
- 2 heads of lettuce (300g)
- 4 roasted chicken breasts (500g)
- 4 tomatoes (240g)
- 1 yellow pepper (150g)
- 6 spring onions (90g)
- 100 grams of bean sprouts
- 1 tablespoon of tahini (15g)
- 1 tablespoon of sunflower oil (15g)
- 1 tablespoon of white vinegar (15g)
- 1 teaspoon of sugar (4g)
- A pinch of chilli powder (1g)
Method
- Remove and discard any lettuce leaves which are bruised and yellow.
- Wash and thoroughly dry the lettuce then place in a large salad bowl.
- Chop the chicken into bite-sized pieces and mix with the tomatoes, pepper, spring onions, and bean sprouts.
- Add to the bowl.
- Mix together the dressing ingredients: tahini, sunflower oil, white vinegar, sugar, and chilli powder.
- Pour over the salad, toss, and serve.
