- Red Kidney Beans
- Onion
- Tomatoes

Method
- Soak the red kidney beans in water overnight or for at least 8 hours.
- Drain and rinse the beans, then cook them in a pressure cooker with 2.5 cups of water until soft.
- Heat oil in a pan and add cumin seeds. Once they splutter, add finely chopped onions and sauté until golden brown.
- Add ginger, garlic, and green chilies, and sauté for a few minutes.
- Add finely chopped tomatoes and cook until the oil separates from the mixture.
- Add turmeric powder, red chili powder, coriander powder, and salt. Cook for a few minutes.
- Add the cooked kidney beans along with their cooking water. Mix well and simmer for 20-30 minutes.
- Add garam masala and cook for another 5 minutes.
- Garnish with chopped coriander leaves and serve hot with rice or roti.
