Red Kidney Beans Curry Recipe

Ingredients

  • Red Kidney Beans
  • Onion
  • Tomatoes
  • Ginger
  • Garlic
  • Green Chilies
  • Oil
  • Cumin Seeds
  • Turmeric Powder
  • Red Chili Powder
  • Coriander Powder
  • Garam Masala
  • Salt
  • Water
  • Coriander Leaves

Method

  1. Soak the red kidney beans in water overnight or for at least 8 hours.
  2. Drain and rinse the beans, then cook them in a pressure cooker with 2.5 cups of water until soft.
  3. Heat oil in a pan and add cumin seeds. Once they splutter, add finely chopped onions and sauté until golden brown.
  4. Add ginger, garlic, and green chilies, and sauté for a few minutes.
  5. Add finely chopped tomatoes and cook until the oil separates from the mixture.
  6. Add turmeric powder, red chili powder, coriander powder, and salt. Cook for a few minutes.
  7. Add the cooked kidney beans along with their cooking water. Mix well and simmer for 20-30 minutes.
  8. Add garam masala and cook for another 5 minutes.
  9. Garnish with chopped coriander leaves and serve hot with rice or roti.
