Method
- Preheat the oven to 375°F (190°C).
- Roll out the pie crust and cut into small circles to fit into a mini muffin tin.
- Press the pie crust circles into the mini muffin tin.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Add the chopped spinach and shredded cheddar cheese to the egg mixture.
- Pour the egg mixture into the pie crusts in the mini muffin tin.
- Bake for 20-25 minutes, or until the quiches are set and golden brown.
- Allow to cool slightly before removing from the tin and serving.
