Ingredients
- 500g Leftover turkey
- 1 medium Onion
- 3 cloves Garlic
- 1 thumb-sized piece Ginger
- 200g Tomato puree
- 1 can Coconut milk
- 4 tablespoons Tikka Masala paste
- 2 tablespoons Vegetable oil
- A small bunch Fresh coriander
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
Method
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion and cook until soft and translucent, about 5 minutes.
- Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Stir in the Tikka Masala paste and cook for 2 minutes to release the flavours.
- Add the tomato puree and cook for 5 minutes, stirring occasionally.
- Pour in the coconut milk and bring to a simmer.
- Add the leftover turkey, salt, and pepper, and cook until the turkey is heated through, about 10 minutes.
- Garnish with fresh coriander before serving.
