Ingredients

  • 500g Leftover turkey
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 thumb-sized piece Ginger
  • 200g Tomato puree
  • 1 can Coconut milk
  • 4 tablespoons Tikka Masala paste
  • 2 tablespoons Vegetable oil
  • A small bunch Fresh coriander
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Method

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger, and cook for another 2 minutes.
  4. Stir in the Tikka Masala paste and cook for 2 minutes to release the flavours.
  5. Add the tomato puree and cook for 5 minutes, stirring occasionally.
  6. Pour in the coconut milk and bring to a simmer.
  7. Add the leftover turkey, salt, and pepper, and cook until the turkey is heated through, about 10 minutes.
  8. Garnish with fresh coriander before serving.
