Ingredients
- 500g prawns
- 75g plain flour (about 7 tablespoons)
- 13g cornflour (about 3.5 tablespoons)
- 2g baking powder (1 teaspoon)
- 200ml ice-cold water
- Vegetable oil (for frying, about 2 cups)
Method
- Peel and devein the prawns, leaving the tails intact.
- In a bowl, mix the plain flour, cornflour, and baking powder.
- Gradually add the ice-cold water to the flour mixture, stirring gently until just combined. Do not overmix; the batter should be lumpy.
- Heat the vegetable oil in a deep pan to 180°C (350°F).
- Dip each prawn into the batter, allowing any excess to drip off.
- Carefully place the battered prawns into the hot oil and fry until golden and crispy, about 2-3 minutes.
- Remove the prawns with a slotted spoon and drain on paper towels.
- Serve immediately with a dipping sauce of your choice.
