Crispy Tempura Prawns 🍤

Ingredients

  • 500g prawns
  • 75g plain flour (about 7 tablespoons)
  • 13g cornflour (about 3.5 tablespoons)
  • 2g baking powder (1 teaspoon)
  • 200ml ice-cold water
  • Vegetable oil (for frying, about 2 cups)

Method

  1. Peel and devein the prawns, leaving the tails intact.
  2. In a bowl, mix the plain flour, cornflour, and baking powder.
  3. Gradually add the ice-cold water to the flour mixture, stirring gently until just combined. Do not overmix; the batter should be lumpy.
  4. Heat the vegetable oil in a deep pan to 180°C (350°F).
  5. Dip each prawn into the batter, allowing any excess to drip off.
  6. Carefully place the battered prawns into the hot oil and fry until golden and crispy, about 2-3 minutes.
  7. Remove the prawns with a slotted spoon and drain on paper towels.
  8. Serve immediately with a dipping sauce of your choice.
